Wine Description

All of our Chardonnays are picked early for higher acid and lower alcohol for refreshing acidity, defined mineral notes, and lingering finish.  The Apollo Chardonnay is a blend consisting of half new Billon puncheon and half second-fill Damy Burgundy barrel.  These barrels are chosen during a blind tasting for their signature "Apollo" nose and body.  To strike a balance between old-world and new-world, it was aged on its lees for 18 months before bottling.

Tasting Notes

A luscious, full-bodied Chardonnay that is bright enough to be paired with fresh-caught crab or lobster. Made with more oak contact than the Estate Chardonnay, the Apollo Chardonnay strikes a divine balance of bold citrus with a stony core.
