Wine Description
Drum & Fife is our Pommard bottling, the percussive side of Pinot that brings depth, grip, and a little swagger. In 2021, the long dry finish gave Pommard time to ripen its tannins fully, while Jory soils kept the line energetic. We kept extraction traditional and élevage long enough to let the wine settle into itself. It opens on fresh cherry and spice with a flicker of burnt orange peel, then lands with that classic Pommard feel: more earth, more frame, more structure. Lifted, elegant, undeniably grounded.

• From the vineyard: Compris Vineyard, Block 1 (planted 2000), Jory volcanic, Pommard clone, LIVE certified, farmed with organic principles
• In the cellar: 100% destemmed, 4 day cold soak, native yeast, punchdowns then pumpovers, 18 months 228L French oak (Cadus and Mercurey), 25% new
• Tech at a glance: 13.6% alc, TA 5.5 g/L, pH 3.65, residual sugar 0 g/L (dry), 100 cases

Drum & Fife, Smashing Pumpkins. Named for Pommard’s role: foundation, beat, backbone.
