Wine Description
Supernova started with a simple goal: pick Chardonnay early enough to keep the energy high and the profile clean. In a warm, sunlit 2021, we harvested at low Brix and built the base wine in stainless to preserve purity, no malolactic, no soft edges. Then time did the rest: three years on lees in bottle to bring quiet depth and that unmistakable sparkling warmth. It opens bright and precise, widens into subtle baguette and brioche, then snaps back to a mineral finish that feels like coastal air. Lifted, composed, ready when the moment is.

Reviews
“The Oasis fan in me appreciates any sparkling wine named Supernova. The fizzy Chardonnay's apricot and white chocolate aromas are counterpointed by savory notes of corn masa and saline. Energetic acidity and frisky bubbles form a stellar explosion that propels the wine's lime, sage and spicy ginger flavors, faster than a cannonball. — Michael Alberty”
